this reminds me of the localization changes they made to inside out. there was a scene where the lead girl didn't want to eat broccoli. in japan, this was changed to green peppers.

There's still a chance that the anonymous stage 1 mid-boss spirit later reveals herself as a new character. I wouldn't count on it, but it is possible. The fandom might well give her a name and personality in any case.

If you mean do some human villagers go to places like the one in the art then I don't think there is a proof they exists in canon

Youkais gets their source of human meat by hunting outsiders yukari brings , that is pretty much what we know
