Looking very beautiful too Tazuna. Is there ever a reason in lore or out of it as to why some Umas hide their ears and Tails?
Nope. The only explanation I've heard is an Uma training other Umas will look like some kind of self-serving bias, but I would imagine you'd want former athletes running an athletics school.
Director Akikawa is also rumored to be an Uma, a specific one from the 50s named Northern Taste. I'm guessing in her case, Cygames couldn't get the rights to Northern Taste's likeness, but again, it doesn't explain why her ears and tails would be hidden.

Yes I remember there being at least a couple others. The rights thing is more than likely it I was just wondering if we ever got an in game reason. Thanks!

Tazuna is theorized to be Tokino Minoru, as in the game there was an event with her where it ends with the promotion of a movie called "The Phantom Umamusume", and there was a movie about Tokino Minoru called "The Phantom Horse", that and her talking about how she knew the feeling of being behind the starting gate. Minoru was undefeated ad he ran. He had a 10-0 career, but his life was cut short. The theory is that Tazuna is Minoru, she ran an undefeated career but got injured/disabled and was forced to quit, leaving her a staff member that hides her identity.

Minor correction: Northern Taste was a racehorse from the 1970s who lived until 2004. Tokino Minoru on the other hand, died in 1951.

Indeed it has... There's also a video of Maeda Rena meeting the real Grass, of which Grass couldn't give less than a damn and was too busy eating away.
Horse blanket not required.

Okay, I searched "Maki (Blue Archive)" and "Binah (Blue Archive)" and it was very funny. And cute.
But I still don't get the meme. How come we have a meme ship between those two?
Is Maki like, a default unit in fighting Binah?
More like Maki is the most meta unit to bring when fighting the big snek as she can lower his high defense. Players bring Maki to the raid boss so much, that many jokingly say Binah has a crush on her.
