posts all get deleted because mods just don't approve them in time. That's very annoying. The rules even say this is an "English-speaking website," so I assume it's not because the art style isn't anime. They are of high quality and break no rules. If it is disinterested, it might be beneficial to add some approvers who enjoy different genres.

For me personally, if I were the site owner or a mod, I would make a new rule for the approvers: you can't just disapprove something without giving at least a note explaining why it was disapproved. Otherwise, how are we supposed to know whether our uploads will be approved in the future? If we know what we did wrong, at least we can avoid making the same mistake or trying to upload the same violation over and over again. It's just common courtesy to explain why something is or isn’t acceptable for a post. This way, the forum won’t be flooded with the same question over and over again, since you could just add a small note to the post explaining why the image was rejected.

Over a thousand posts go through queue per day. It wouldn't be feasible or fair to expect every approver who sees a post to explain why they didn't approve it, especially when for a lot of posts it'd similar mundane reasons (anatomy, lower quality, personal dislikes etc)

So the alternative is that thousands of rejected images lead to their uploaders coming here to ask why they weren’t approved, flooding the forum with repeat questions? Wouldn’t it be simpler and more efficient if approvers just left a short note when rejecting an image? Even something very brief would save everyone time and reduce confusion. Approvers have that feature to put note, at least make use of it.

From what I understand. The mods see a giant gallery of posts waiting for approval and go through it, picking ones to approve while ignoring or deleting others. Those that stay ignored for 3 days are automatically deleted. In the end, it all depends on whether the mod takes the time to notice your post in the sea of posts waiting for approval, or if they scroll through the gallery looking for posts that they particularly like.
TL;DR it's not "if it's not deleted it's approved", it's actually "if a mod approves it within 3 days "

Personal dislike should not be a reason unless it's some crazy fetish that goes against the rules. at that point its just a gamble of what approver sees it.

Depending on the quality of the queue, it can take me 1-3 hours to go through a queue of around 1,000. Considering I go through queue daily, and that there's usually 700-1,000 posts I haven't seen that are in the modqueue daily, it's already a lot of time commitment to something that is entirely voluntary. If I were then expected to add rejection reasons to every post I don't want to approve for whatever reason then I would probably never get through the modqueue.
There's a bit of expectation on uploaders to review their own posts that didn't get approved in the modqueue and to learn from it. This thread is here to help if they're unsure exactly as to why it may be the case. Could approvers be more active in this thread? Sure. But it also does often get tiring having to explain the same reason over and over as well as wanting to avoid conflict with those not willing to accept feedback. I'll reiterate that approvers (and every other person contrbuting to this site for that matter) do this voluntarily.
There's certainly ways to improve workflow but having approvers give a reason to every rejection does not achieve that.

You're unfortunately not going to find the perfect approver who approves all art that everyone agrees is of good quality and happens to like even the most obscure niches and fetishes. There's a lot of subjectivity when it comes to what can be considered "good" and "high quality" art, which is a large part of what the modqueue is.

Not every post is going to be approveable due to quality standards. It'd be great to display the kind of quality that's expected but art is incredibly subjective so it's hard to portray. People can check out about:mod queue for more information which was recently rewritten by site owner Evazion.
