Cows in the Mario franchise, mainly appearing in the Mario Kart games as an obstacle for the racers. It first appeared in Mario Kart 64, but has since shown up in other Mario spin-off titles, such as Mario Party. It became a playable character in Mario Kart World, where it's simply named Cow.
