Well, he was a human too. There is no reason he should be too powerful for another human to defeat.
Especially considering that things like swordsmanship did not exist in his time, and he just throws the swords around instead of fighting with them.

I do recall something about Shirou saying that Gil was the only Servant that he had a real edge against, cause its faster grabbing a sword from UBW than from the Gil's treasury.

Avalon: Deus Ex Sheath only protects from damage, and Shirou can't cast it many times, unlike Gil.
Repeat Ea from a distant few times without charging much -> use full-charged Ea -> rape Saber if she's still alive OR surprise Ea at full-force from a distant -> force Caren to make sandwich.
