Why's Youmu buying a dairy cow? Aren't they generally more expensive than beef cattle? They usually don't taste as good either.

Once they start to wane in there viability for producing milk they're sold and slaughtered just like any other cow. They're only worth more money if they're intended for milking, once they're too old and are sold for meat they have no more value then any other beef cattle, indeed depending on the reason (sometimes they're sold because of some defect that's not an issue with meat, but makes them nonviable as dairy cows) they could be cheaper.

As for quality frankly the meet is almost impossible to tell apart from any other cattle, it might even be a bit better since dairy cattle tend to lead a rather sedentary life. Almost 20% of US beef is from such cows (and it's likely similar elsewhere) so you've certainly eaten tons of it if you eat any beef at all.

Not to mention in this artist's Gensokyo I'm pretty sure "cows" are "cows" and that's about all there is to it.
