But I thought the last reset created a stable time paradox? Unless Eirin told them it was a really fucking terrible idea, then I missed it.

For stable time loop a chain of key events must consistently happen. For example for "stable loop" immortals must every iteration by all means get Sakuya launched out of Earth in certain direction, preserved for billions of Earth years to be picked up and used her time powers. In our case, Sakuya either possibly retained memories and didn't like the experience or 2nd iteration rolled 'em d1 for Sakuya's decision.
Immortals had all time in the world to think roundabout, but now the world ended and "Yes - Roundabout" is playing for them.
