I don't think that's Shigeru Miyamoto. I think it's Sakurai, the man mostly behind the game. Don't know his full name, though.

Did anybody actually ever use the Wiimote/Nunchuck configuration? I've only ever seen people use the classic Wii controlers or GC controlers.

Was. He's resigned from HAL around 2000. He still works on nintendo stuff, but he's no longer heading the kirby series.
