It's basically a wrap. Usually well seasoned and marinated meat grilled on a vertical pit will be shaved off piece by piece (either beef or chicken)and shoved into a delicious pita wrap along with pickled turnips and other stuffings (lettuce, tomatoes, olives, peppers and or other greens), slathered with either a garlic mayo and or humus, then packed tightly, pressed and left on a grill for a minute or two to toast the wrap and voila, a mouthwateringly delicious food fit for ancient Babylonian gods.
