Don't fucking kid yourself. Darth Vader threw away his "soft" emotions and had his tear ducts removed because he's badass like that and has slain hundreds of Jedi. This is a fight between two lords, though I'm not too sure who will win.

Vader would have to use every single Force abilities to the max if he want to stand a ghost of a chance against Saber's divine blade and downright inhuman physical abilities.

Anti-fortress what? Vader is capable of so much with the full power of the force. But I guess everyone here is some kind of King Arthur fan to not even consider Vader and him having been the strongest Jedi and the only force user who had the potential to control the literal embodiment of the force, which is the stuff of the universe. He's powerful and even in his "mechanized" state, he can very much stand up to Saber.

Well, if Vader can dampen Saber's momentum with the correct use of Force Push/Pull, he might stand a chance... though if this Saber got Avalon then Vader is really, really, really screwed with a Star Destroyer up his ass.
Excalibur is classed as an anti-fortress noble phantasm last time I checked. In other words, it's powerful enough to anhiliate a fortress (other phantasms may be classed as, say, anti-person (Gae Bolg, for instance), anti-monster (the true Byakuya and Kanshou) or in at least one casse I know of, anti-army (Caster, I think, has an anti-army noble phantasm she unleashes in Atraxia). Don't get me wrong, I know Vader is a high caliber fighter. If it were him vs, say, Archer (any of them, really) or Rider (Stay/Night version-don't know much about the others), I would have no issue giving him the match or declaring it a tossup.
But, in my mind, someone with the power to anhiliate a fortress with a single attack is a *bit* overpowered when matched up against most people.
Of course, if she does not have the energy to USE Excalibur, then it's a moot point, and the match would probably go to Vader dimply due to him being able to predict her moves through the force. I'm a star wars fan too, mind you. Seen all the movies, played many of the games, delved into the EU (and learned a great deal about it from my friend). It's just that from what I know of these two characters, the advantage falls to one who has more firepower at hand. Take excalibur out of the equation and yes, the match becomes very even, but I give the advantage to Vader.

Hmm, let's see here.
Vader vs Archers: F/SN Archer = Even, until Archer pulls out Reality Marble (UBW). After that, Vader is at a disadvantage, but he might still win if the guy don't pull out and Broken-Phantasm'd Hrunting or Gae Bolg. F/Zero Archer = I'm sure Vader can dodge Gil's danmaku, so it's even there. Enkidu will have little effect on Vader since Vader's most certainly not of divine origin (or is he? If he is, then Enkidu may make life harder for Vader). Enuma Elish, on the other hand, is plain GAME OVER MAN, GAME OVER. Hint: anti-world. F/Extra Archer (Robin Hood one) = Very Even, leaning to Vader. Old Rob can hide all he likes, but Vader can easily find him. If Vader can neutralize poison, then Rob is quite screwed (his Noble Phantasm is poison-based) and best he can do is kite Vader.
Vader vs Riders: F/SN Rider: Vader's in the advantage. She's arguably the second weakest Rider of them all, and if Vader can somehow counter the petrification curse he's home free. Of course there's Bellerophon to mind for, but Vader can handle a speeding divine horse charging him, no? F/Zero Rider: It'll be quite a close deal until BROSKANDER whips out Ionioi Hetairoi. Gordius Wheel, while an anti-army, can be countered rather easily by Vader. Ionioi Hetairoi, however, will pose a very different matter altogether; Vader must kill at least half of the army to destabilize the Reality Marble, and that's no walk in the park. F/Extra Rider: I really can't say much, but her Golden Wild Hunt is basically just a curtain fire like Gate of Babylon. The fact that slugs are hard to deflect by Force users may make the the difference, though. F/StrangeFake Rider: Well... it's the Black Death, and I trust Vader had vaccines countering an ancient disease like that. Easy win.
If we go into Fate/Apocrypha servants... then Vader will get screwed by Karna. Seriously, that guy is packing a truly broken, Anti-GOD phantasm (named Vasavi Shakti, but i'll call it Kunta).
Saber has this one easily. The only Jedi that Darth Vader has ever successfully killed have been old men and children. If it isn't over 60 or under 10, he can't kill it.
