Nothing to do with dickishness, and all to do with branding and copyright. You're not going to get new viewers if someone discovers your talent, and falls in love with them, only to find out that they're already gone. Additionally, removing as many liabilities when it comes to potentially getting kicked in the nuts over Japanese copyright law is worth more than keeping the channel available.
There's nothing unique about this to Nijisanji. Most contracted VTubers that leave have their stuff made nuked, whether it be for the above reasons, or other, like not wanting to leave their content up for others to abuse.

She asked for all the videos to be privated herself, and some like her GSA cover are in fact staying up.
