At least in today's farming industry, you don't need to actually touch the crops directly to grow them, and I assume the same way a parasol can protect her from the sun, gloves can protect her from garlic. Also, that's all kind of moot, as canon doesn't claim she's weak to garlic, just that she doesn't like it. For comparison, crosses are a common defense against vampires, but have no apparent effect against the Scarlet sisters.

Apparently, Remilia shares onis' weakness to roasted soybeans, as well as despising sardine heads, because the Japanese word for vampire contains the kanji for oni. She also can't cross flowing water.
