How these monthly competitive races work is that from prelims to semifinals you just need to win 3 races out of 5 once over the two days for each round to progress to the next one at the "top" of your bracket, and then you get shuffled into a final race against two others. If you win that final race you get to see a fancy animation that says you've made 1st out of a few thousand people who were in your initial pool.

But this is actually a clever deception, because there can be any number of people who get 1st in that final race, and there's actually about a third of the people in your pool that will see that "1st place" screen.

As for your second question, no, they don't get recorded anywhere except the available trophies for a player to display on their profile
