From what I can guess I suppose even she didn't want to push her luck messing with Beelzebub, since there just isn't enough information on Beel to accurately gauge her.
Same, but I can tell why Vanripper went with the white- it just looks more science-y, and it's a handy visual for how Azazel tries to hide her inner demonic self with a thin, barely-there veneer of angelic purity.
