I wouldn't mind seeing this in 'A New Hope'. Obi Wan holding the line for the rest of the group to escape before Darth Vader cuts him down. More dramatic.

While it might not be for Obi-Wan perhaps Luke or another character might do something like this in Episode VIII or IX.

I'm honestly surprised that jedi never do anything like this. Can they even do this or swing multiple light sabers via the Force?

A few can swing multiple lightsabers with the Force (like three), but usually they are a defensive ring around the user, with maybe one striking out at a time. Such things require a lot of focus, and the Force has a tendency to tire our the user if they use it for too long.

Uncivilized or not, whether someone's killed by a lightsaber or a blaster they're still equally dead. The fact that the Jedi never seemed to use this kind of tactic is one of those "shame on them" moments.

Civilized not in the sense of death, but in the more personal and precise nature of it. A blaster was referred to as random and clumsy. A lightsaber as an weapon elegant for a more civilized age. Aside from throwing a lightsaber, you have to get within a meter or so of your enemy to cut them down with a lightsaber, so it will be personal and intentional. A blaster can shoot maybe thousands of meters away and you could hit something you didn't mean to hit.

Besides, Obi-wan Kenobi wouldn't need a wall of blasters to do what is shown in this picture. All he needs is his lightsaber and a wall of stormtroopers shooting at him. The deflected shots will do the rest for him. He is that good with his defense.

Here's a supplemental video about Soresu, the defensive lightsaber form mainly used by Obi-wan, which renders him practically invulnerable to blaster fire. Boy, would he own most of the Touhou universe XD

True, it's unlike him, but I can imagine him setting aside his morals and "civilized" nature in order to get them out of there.
