Maybe the shore has an extreme drop off. Like an underwater cliff? I mean, that could be an island, and islands are essentially mountains. Mountains do exist which possess solid 90 degree angle drops. Though honestly, I wouldn't be surprised if that thing was hibernating, and it WAS the shore. It almost looks like it's coiled around itself, and the island is a hump inn its tail.

Unless it's one of those cheap ass monster that take can take you out in one strike and take a hell a long time to beat but doesn't even give enough xp to level up.

Now that I see the monster named, the new Sabaton album springs to mind, namely the track Twilight of the Thundergod: "Jörmungadr twists and turns[...]" How the singer's tongue doesn't get tied up on this line is beyond me...
