She took up the name of Guinafen after reaching Luofu to assimilate better with the natives, since it is her dream to learn about culture there (she's basically a Luofu otaku on a pilgrimage). You'd never think that she's actually from different planet, but it's explained when you first met her and later expanded on the ghost hunting event.
On the other side of the story, in Arthurian legend Guinevere was Arthur's wife (who also have an affair with Lancelot/Mordred/Yder), so Saber looking confused is 100% understandable.

Adding to this: Guinaifen is straight up from an Arthurian Legend / European / old England? inspired planet. She talks about it in her voice lines, her brother's name is Lancelot and she says he's a Knight of the Roundtable lmao. I wonder if that's just some silly joke or if we'll visit a planet like that in the future. I really hope so

He was a knight, but became a pirate after their homeworld was destroyed by the antimatter legion. The actual reason she's on the Laofu is because she's working off his debt.
