It's not even white surfaces anymore, it's much more awesome (read:dangerous) than that!

I don't think it has to do with surfaces made of crushed poisonous moon-rocks. I think the portal gun only works on flat, SMOOTH surfaces. After all, the white gel was the last one in development and there are signs that Aperture Science was testing the portal gun long before it developed.

And I always assumed it's just that certain surfaces are better for portaling than others, kinda like how some materials make better electric conductors.
Moonrocks were so good for it you could use it as paint on normally unportal-able surfaces

It's nice to see the science tag is still being used.
