Is there any reason why this series steadfastly refuses to give anyone a name, and instead refers to everyone by their jobs and some other aspect of them (I.E. female or young)?

Well, the demon king (queen) was give the name "Ruby Eyes", but nobody used that afterwards. Maybe they're just keen on privacy rights...
Or they're just generic characters.

really the story just refer to their "Job" roles its basically your typical RPG in a world setting type of thing

Given that the story tries to deconstruct the typical garden-variety RPG world and the characters within it, I find it kind of fitting really.
