Air Force Delta on my old DC had a level like that. SAMs, AA, and flying enemies everywhere... Best tactic was the fly in on the deck, full afterburner, turning like crazy and shooting at any target you could lock on to... once the flak was gone, the flyers were easy...

...which solves nothing, since the SAMs are still going to tail you all the way to the dam (and you can't outspeed them, just avoid the missiles through some crazy stunt). Best way I found to go through this is to use FAEB's to blow up the AA defenses in the ravine, once you arrive at Avalon the rest is pretty manageable.
Then again, you can always be a pro, pick the F-15 with normal XMAA's and fly-fight like a man :D .

I dunno what you're talking about, but when I just ran through it at top speed I usually lost any SAM's trailing me when I would turn a corner.

This. As long as you keep the afterburner on, the canyon is designed so that missiles will hit the walls on their way to you; it's a tactic to keep you from loligagging and ruining the tone of the plot. In dire situations, you can always slam on the brakes and do an S-turn to get it to overshoot you...but, then again, I've spent at least a thousand hours in Ace Combat games, so perhaps I find them too easy...
