Oh no, I definitely like it. Maybe the floating arc(?) (I'm not sure what to call it) is a bit much, but overall it's a good design. Just lamenting over the fact that we could have more.... I'm especially missing the FA on that part. I guess to see it in a positive way, I'll never have any trouble choosing an Ascension. (Like I do with Summer Musashi, where I keep switching between all three constantly)

Completely understandable, and I guess a very viable solution would be to make 2 Costume Dresses, that way, she could have her past selves as Ascensions, but still have 3 swimsuits (tho such a thing would probably be impossible with Lasagna's current situation, whatever it actually is).
Have you tried to the "Random Ascension Level" feature? I don't know if it also changes the sprite used, but if it does, at least you wouldn't need to change it manually (personally, the only Servant I change the Ascension level relatively frequently is Space Ishtar, depending on the kind of quest I'm going).

Yeah, well... The last new costumes - aside from the obligatory Summer males - were the Latex-Proteas at the beginning of the year. Well and Summer Kuro and Skadi and Wanjina with simple costumes that don't have FA-like art and were basically just removing clothes (or adding weird goggles). And if they did that with Summer Morgan, she would be.... naked. With goggles. So yeah, no hopes there.
The random Ascension thing would be the solution, yeah. I'm just the kind of person who would reload the party formation until I get the Ascension I want to see at that very moment. So that defeats the point of that function again. But that's a me-problem.
