Makai is the demon world in Gensokyo. It was created by Shinki, who rules the realm. It featured in the PC-98 Touhou games and was recently revisited in the latest Touhou game, Undefined Fantastic Object. Yumeko played much the same role for Shinki as Sakuya does for Remilia.

So... that would make Yumeko an actual demon. Since Makai literally means 'demon world' or 'realm of devils'.

Yumeko might have an amazing dexterity along with with that strength, she might be able to throw a sword just as good as throwing a knife, and throwing knives aren't that big of a skill, Remilia, Youmu and Yuyuko can throw knives in their debut.
Plus her time-stopping powers might have some limits, she managed to be defeated by Reimu and Marisa after all.

It's just a graphic effect, Kagerou uses knife-shaped bullets as well in ISC, but isn't a knife user, and Remilia only uses them to start her blood-based magic. Sakuya's knives are her only weapon, and she still "defeated" Yukari and the others. About Yumeko, if there isn't any info about her, you can't say how strong or a good sword-player she is. She lost to Reimu and the others, but never defeated anyone, and that's it.

Those limits are called "Spellcard rules". Without them, Sakuya would cut Yumeko to pieces before she even realizes it happened. The ability itself isn't even just "stopping time" either. Oh, and Reimu lost to Mystia, it doesn't mean anything.
Really, how did people started with this "any given pc-98 boss is invariably much stronger than any windows boss of the same level" shit? I bet that according to someone, Mima, Yuuka or Shinki could take Yukari and both the Watatsuki at the same time and still win.

No, she isn't omnipotent. Unless it's written somwhere, you are just assuming that being able to create some weirdos (and even so, depends on how much time she needs to do that) automatically makes someone infinitely powerful in everything else.

Not quite, I noticed the heavy presence of Judaeo-Christian symbols in Makai. It can easily be argued that Shinki is a gender-swapped Elohim. She even has the same hair and eye color. One of his defining traits is omniscient, so it would logically transfer that she is.
It would also mean that she went easy on the four "heroines" of Mystic Square.

Come to think of it, I read that Vengeful Spirits are deadly to Youkai's in the Touhou Universe, and considering that Mima is powerful enough to form a humanoid body...
Improvman, Touhou is generally plenty of references and symbolism. Here you are taking them as facts and pulling some "logic" even if no one in any official material ever talked about it, saying "she is omnipotent and went easy" as if it was ever stated or hinted anywhere. A bit too convenient i'd say.

Lunarians fear impurity, and Junko caused it to be too strong for them to stay around, using also A DAMN LOT of purified fairies to do it. Besides, it isn't a fatal/weakening "weakness" like those of a vampire or a oni, as it would just make lunarians start aging. Saying their weakness are "fairies" is really simplifying it too much.
As for the vengeful spirits, it works only *if* they manage to possess the youkai and to change its mind, it's not like they can do it on a whim whenever they want, or just by touching them. For Mima it also depends if she can do it at all, since it seems there are various kind (the ones you talk about are onryou, and Marisa says they are stupidly weak, while Mima is an akuryou). Besides, this wouldn't "kill" the youkai, but substitute it. The spirit would stop being a "spirit", and would become the soul/consciousness of the possessed youkai. If Mima somehow managed to possess Mystia, she would become "Mystia" for the rest of her life without being able of turning back. Mima having a humanoid body is irrilevant, since Touhou ghosts are almost always humanoid and the biggest problem with them is that they can deceive people because of it.
