Is there any particular reason with the apparent uptick of Garfield posts in about the past year?
I'm going to make up an answer that sounds vaguely right and blame it on the extensively researched youtube video series by Quinton Reviews that snowballed into Supereyepatchwolf making an equally extensively research video and it just snowballed from there.

Close but no cigar. While both their videos have had a significant role for sure, arguably one can just point to the developments presented in Wolf's video and come to the conclusion that, after engaging in deconstructed Garfield content for decades now (best represented by Lasagna Cat and Gorefield), folks have looped back to just openly, unironically liking Garfield. Quinton's basically the poster boy of that, his open love for it contrasting the general negative attitudes to the original comics seen in the (online) mainstream for ages now, though it's been an underlying development even prior to his videos.
But more generally, you just see this with a lot of properties online, where after decades of something not being seen as cool or fresh or good, or only being ironically enjoyed for one reason or another, folks finally reach a point where they go "you know what, I do like this, and I'm not afraid to admit it." Garfield is just one of those cases, as Quinton himself noticed.
Also, concentrating the question strictly to Danbooru, it's probably also worth considering who is actually uploading the art to the site in the first place, which among other users includes a Garfield fan themselves!
