Um, I'm not fully understanding this. Why is Kanata upset now?

Its a japanese thing, unfortunately. They obsess over these things way too much. Thats part of the reason why Kanata and the rest of Hololive keep such a strict guard over their identities and personal lives, if an obsessed fan finds out that they don't look like their avatars or that they're engaged/married/have a partner, there's a very real chance of not just doxxing and hatemail but even violence.
Yes, some fans are so fucked in the head that they hurt or kill over their obsession.

It's not exactly just a Japanese only thing, I think, though maybe it's more for actors/actress and youtubers rather than idol outside of Japan[?]. From what I've heard Japan is also more strict about their idol's personal life in general so that's a plus I guess. Won't stop stalker and paparazzi, but still.

I won't say idolizing to this degree is right, personally I can't really understand why someone would think something like that, though I do know that the act of "idolizing" is a universal thing. Some people will downright despise some youtubers for "abandoning" certain games, or reviewers for having an opinion they don't agree with. For a harsher example, hating people for being very toxic, a crime they did, or at least a crime they're accused of because "I thought you're better than this". This is more grey territory, sometimes they deserve it sometimes they don't, because sometimes they didn't really do the crime, but sometimes they're a genuine pedophile and rather proud for it.

Yeah, I don't think it's exclusive to the Japanese, but IIRC there's a lot more of a culture of idols specifically being made to put up a facade of "purity", virginity, availability, etc. that you don't see to that same degree in other countries, and I think that has the unfortunate tendency to: 1. leave fans feeling disillusioned when the (obviously exaggerated) persona doesn't correspond to reality 2. attract the obsession of the skeezier sort of fans Which, of course, is a disaster waiting to happen.
