This happens likely not only because Red has a good nose, but she's also color-blind so she doesn't notice they have different hair.
That doesn't work though, even if she was truly 100% color blind (which I doubt), she would be able to see the difference in contrast, Texas having considerably darker hair... Not to mention how dishevelled Lappland's hair always is and the differences in how their ears are aligned, she's got plenty of clues to discern them if she wasn't relying solely on their smell.

Maybe she was trained to rely on her smell more often than not?
