Seems to be a trend of late. Several cm thick pancakes. Not seen one in real life, but I'm told they've become popular in some parts of the world.

Ah, Japan-style uses wipped egg whites with the yolk put back in later; makes incredibly fluffy pancakes.

Actually, it seems they are supposed to be custard-y on the inside.

I've seen ordinary pancakes serves that way too. The outside is fried crispy and the inside gooey. Like a pie or souffle.
