UBW can recreate anything with a blade. that means gunblades, which used gunpowder, he just has to have come in contact with them. There is no 'pre-gunpowder' rule, he's just not good with guns. Its more a question of how far from a spear (blade on the tip!) giant pocky sticks would be.

That's because his spirit origin is Sword, which is why his reality marble can mass produce edged weapons. Complex and complicated weapons that humans have made can also be produced in UBW but since they're not his specialty take longer and more mana to make.

Presumably Archer can use normal Gradation Air (well as "normal" as Archer & Shirou's version is which Rin notes in Stay Night & Ataraxia is very much not normal) to create guns and such, but no, they wouldn't be instantly scanned and stored in his RM like say melee weapons would, I imagine.
For example, in Ataraxia we see Shirou mentioning Archer Projecting an entire set of fishing clothes and a super expensive computerized fishing rod that was some sort of ultra rare modern prototype of some company's product.
And of course, in one of the summer interludes, Archer Projects an entire cotton candy machine to use.
