They work pretty well - too well a lot of the time, since you tend to be diving in warmer climates. People switch into their wetsuit as close to diving as possible when diving somewhere warm. The point is to have insulation that isn't exactly water-tight, but which keeps the rubber-insulated air bubbles (which convect heat very slowly) between the body-temperature air or water inside the suit and the cold air or water outside the suit. Wetsuits come in different thicknesses and coverings, though, which drastically alter how well they insulate, especially out of water.
