For those who don't know, Jeanne's personality back then could be described as taking her personality when she's an Advenger and make her religious.

It was also said that she actually was just a normal girl who got picked out/aided by the counterforce and that her personality would be different during that time. (That voice of god she claimed to hear? Just the counterforce ;P)

This was her lore before FGO, and even apocrypha was a thing.
