I think Darj would enjoy doing some flying. :-) (She should get the required training before trying to fly by herself, of course.)
She better get some flying lessons from Lynette(From Strike Witches) or Giles(From Red Alert since he is also a British and a former RAF pilot.).Although I am thinking someone from Saunders will actually flies a fighter plane.consider that US got some of the best planes in WW2.
And by that logic, St. Gloriana and Kuromorimine should also have people that can fly planes
Given that they're all based on dang aircraft carriers, it's always been a bit weird that they didn't at least have observation aircraft. (Actual air support would presumably be too hard to referee.)

That reminds me of Kay's "tankery isn't war" statement. The sport really doesn't simulate the full spectrum of warfare.
Also along the lines of aircraft carriers, you would think that there would be an airstrip somewhere on them so they could move people and supplies on and off the ship quickly while underway, especially since even Ooarai's ship is over four times the length of a freakin' Star Destroyer! XD But you don't see anything like that in exterior shots of the school ships.

One thing that is confirmed is the school ships can land planes after all.Saunders landed their C-5 on Ooarai to keep Ooarai's tanks in the movie.
