Kishinami Hakuno lacked a default name in Fate/EXTRA, and they were simply referred to as "Yourself" in promotional materials before a name was introduced, so Zabiko is a nickname given to kishinami_hakuno_(female) due to the abundant use of Francis Xavier (in japanese: フランシスコ・ザビエル, Furanshisuko Zabieru) as a joke answer about her name during Fate/EXTRA
