If someone can canonically say this is possible, I'm placing this on the how's that even possible pool (simply because Sakuya's knives can't hurt tenshi at all based on her win quote against Sakuya)
I for one am against inclusion in the pool "How is that even possible" because regardless of her survival, bunch of knives getting stuck in a person seems very possible to me...

I assume it was more canon for reason. She does state her skin is impenetrable to knives, which I believe Sakuya even confirmed with a surprised reaction.

There is no canon in touhou. There's variable/interpretable source material, but no real "canon". Anytime someone talks about canon/fanon in touhou they're actually just trying to validate and force their opinions on others.
It's even more laughable trying to claim that something they only said is canon considering all the girls are well known for their theatrics, lying and general bullshitting.
I'd like to delete this from the pool just based on its poor taste, but the "how is it possible" can also apply to very concept of guro being introduced to touhou in general as it defies game mechanics, lore, the spirt and intent of the series. So I suppose it somewhat fits.

I can buy the notion that some of the girls in touhou is known to lie and bullshit, but ALL of them? I hope you have evidence to back that claim up.

The canon of touhou is everything that is written by ZUN, which would be the games and the official printed works.
I think you need to understand fanon and canon properly. Canon is something ZUN has stated himself to be true or written as being official for the series, it's an opinion and creation OF THE ORIGINAL AUTHOR. In Scarlet Weather Rhapsody, when Tenshi beats Sakuya in her Story mode, Sakuya will talk about how her knives can't pierce her.
