as a South-east Asian myself, it's just a tradition to put some fresh vegetables when we're eating meat (chicken or whatever, fried or roasted). Usually with cabbage, cucumber and green eggplant.
I think there's a health-related explanation about it, but I'm not good enough to explain it here.

Not really, it's only meant as decoration (as in, nobody ate that afterwards. Those fancy rose tomatoes, those cucumber slices too usually not eaten). The 'tradition' stems from some chinese dynasy food, it seems. Japanese too puts shredded cabbage when serving deep-fried meat dish, such as chicken fillet or katsudon but for dietary reasons (they ate it).
