Based on what Mordred's whole story was about I believe she would would scream for joy if Artoria actually admit to being her father since it was pretty depressing and Artoria was a bit of an asshole, even if Mordred was a freak of nature.

There's been some speculation that the Fate Artoria having suffered through so much grief as she did as king thought she was protecting Mordred from having to suffer the same fate by denying her the throne.

Another justification that I've heard is that Saber was basically raped to conceive Mordred, so denies Mordred out of denial that it happened.
