Space battle anime are like that as well. Take out all the little guys first, than the flagship.
Gamers tend to do the opposite. Focus fire the hero ship, than if the game isn't called, shot the next largest ships.
This can be a problem if the target is Space Battleship Yamato and she has a modern Earth space fleet with her. If you focus Yamato, the other battleships with blow you to pieces with their wave motion guns. Or the destroyers will just overwhelm you with hundreds of torpedoes.
Never underestimate the destroyers. Torpedoes are nasty. Ask Choukai about destroyers.

Depends on the gaming genre, I guess. In MMO boss fights, for example, tunnel-vision on the main boss when there are adds around is a pretty good way to wipe. Although there are exceptions and caveats sometimes, you can seldom go wrong in an MMO by killing smaller mobs before attacking the boss.

You're basically describing the 'wrecking ball' and the 'blob' fleet formations in Eve Online.
Gamers do the opposite because for decades developers wouldn't/couldn't/chose not to never develop games that way. Go play the original Doom or Doom 2 on the hardest difficulty. Now imagine what kind of hardware would be necessary to render ALLLLLLL those monsters on screen at the same time on the id Tech 5 engine or Unreal 4 engine.
