Why not? What evidence do you have to assume she isn't?
Every depiction of Sariel is in every culture is male. The pattern hadn't been established yet so it is a little boring to assume, they are missing a lot of potential.

SinGyoku has three forms, two of which being a supposed male priest and a supposed female priest. Meaning it basically has no gender. But it's not even known whether SinGyoku actually has a male form due to how little detail the sprite has and it having no dialogue So it doesn't count
