Yeah, honestly, I tend to die more in the Souls games from falling off things than the combat. Souls is generally just about learning the layout, which is not that far from Touhou, but Touhou has a much less forgiving learning curve to it. Touhou is, in general, a much harder series than Souls is (and Touhou isn't even the hardest danmaku shooter by a long shot.)
If one considers deaths as the marker of difficulty, Dark Souls (2) and Touhou are pretty similar. However, in Touhou you start from the beginning after every few deaths, while in Dark Souls you start from bonfire ten minutes back. The causes of deaths are similar too, from learning the game and from stupid mistakes.
Compared to mainstream games, both need much more practice to be successful in.
And I don't really see how Dark Souls 2 is badly made game, outside of platforming, which tends to be most difficult when seeking non-mandatory secrets. Which is fair difficulty, IMO.

Really bad hit detection. Like the hitboxes are embarrassingly badly setup and the game is full of really obvious bugs they didn't fix (think Bethsedia levels of bad playtesting)
DkS2 isn't hard, it requires patience and a specific mindset, also a bit of brains and observations. If you can't do that - go home a play your 'press x to win' because you can't do anything else.
You can do it, Aya-chan!I can totally play this game!
