Pretty sure that's not how Laplace's Demon really works but I'm too lazy to look it up.
Well, like the Professor explained, Laplace Demon, is an abstraction of a power "daemon" (greek) that would be the embodiment of his theory. His theory was of a deterministic Universe, that if we could, at any given point in time, know the position and energy/state of all particles in the known universe we would be able to predict the future. So free will would be false, since even the reactions in a human brain would be able to be determined. Remilia is the Scarlet "Demon", and she controls Fate (events that can lead to a particular future). It stands to reason that for doing that, in a deterministic universe, where free will does not exist, what she does is actually see into the future. So she should be able to dodge that.
TL;DR
Remilia to control fate works like Laplace Demon, she has to be able to see the future in some degree. Laplace demon does. And since the fate of taking a plate of ramen in the head is not a good one, she should have been able to dodge/avoid that.

Ah, but your theory overlooks one key fact my good sir... that the demon might WANT to have ramen on her head!
Which would be impossible due to the uncertainty principle no? Because if you knew the exact position of a particle at a given time, then you cannot know the momentum of a particle at that position at that time, therefore you cannot know the where the particle will be next?
Who are you?Given the physical states and forces of all matter in existence, it is possible to predict the future. This idea is called Laplace's Demon.Greetings. I'm the Scarlet Devil. And so I called upon the infamous Laplace's Demon here today.Dodge it, dammit!!Whammo!!Laplace's Demon
