I think it actually has to do with the term "marbling" for how well the fat is layered within a cut of meat, seeing how this is sort-of in the shape of a marble, and textured as so.

DHP is correct. 肉球 is a general Japanese term for paw pads, and it literally means "meatball".

Still love the taste if well cooked.
