Same way dropping a blunt steel wedge on a car cuts it in half; sheer force. Not a pretty cut, but still.
To me it kinda looks like she stabbed herself in the leg in a desperate attempt to muster enough leverage to block it, and the knife is just "sliding" under the impact.

Has to be the latter since the former would crush the leg not cut it.

Anyway talk about a desperation move. You live but you are still basically screwed.

Kyoko uses her spear like a slashing weapon too so it's not like there aren't other kind of violations anyway.

Spears were historically used to slash, not just stab. The long range made for a lot of force at the tip, so it could conceivably carve unarmored flesh.
