i dont get it. Someone explain this joke, like ive played the original, and the remake both past this point, but I can't recall where or how this joke would work.

I don't care to look up the cutscene to varify, but it wouldn't surprise me if it were the case. The Remake took liberties with abandon.

I mean, he isn't wrong there. The remake DID take many liberties, but I completely understand finding the constant discourse on any random ff7 image, related or unrelated, annoying. That train walk meme gif of ff7 in particular has like 20 comments of just fighting.
