It's likely a reference to Han Solo's line in Return of the Jedi. Leia says "I love you" to Han right before he's dropped in Carbonite. Feeling the original wasn't right for him, Harrison Ford ad libbed "I know", feeling it fit Han's personality more.

That was actually in The Empire Strikes Back. Though speaking of RotJ, the reverse happens when Han tells Leia "I love you" and she replies "I know..."
