Is Eirin really as sensitive about her age as Yukari is?

nah dunno, it's just how fans portray her.
It's probably just fanon.
None of the "Old Maids" are sensitive about their age in canon, except Yuyuko during her interview with Aya and Byakuren shortly after her younger brother died of old age. And in Byakuren's case, it was more fear of old age and death than anger at someone making an "old hag" joke at her expense.
For an added bonus, Yuyuko and Byakuren are the two youngest members of the "Old Maids Alliance", as well as two of the youngest not-currently-human characters -- besides Remi and Flan (respecitvely 500 and 495 as of EOSD), the only such characters who are certainly younger than Y&B are Youmu (around 60 years old as of PCB), Ran (over 800, but probably younger than Yukari), Hatate (a 300-year-old kid, according to Aya), and the Tsukumo sisters and Raiko (either 99 years or a few days old, depending on whether or not you count the time they spent as discarded tools as part of their age).
Cirno's age is unknown, but she's familiar enough with the 60-year cycle of flowers to recognize it almost as soon as it begins, meaning that the events of POFV were almost certainly not her first time seeing the "festival." By my reckoning, she's seen a few cycles, meaning she's several sixties of years old -- certainly a few centuries, and might even be as old as a thousand.
Sakuya Izayoi's age, status as a human, and even her status as a person with the words "sakuya" or "izayoi" in her original/true name, are ambiguous. That, combined with her timehax abilities, make it damn near impossible for anyone to even begin to guess her age.
Alice's age in Mystic Square is unknown. She was human at the time, but there's no telling how much time passed between her creation by Shinki and the events of MS. She may have looked like a ten-year-old girl, but that does not necessarily mean she was created ten years prior to MS. (To say nothing about the MS Alice and PCB-and-beyond Alice Margatroid dichtomy, and the overwhelmingly small but still non-zero chance that they might not be the same person)
(spoliler'd per Zun's rules on discussing the endings)
Sanae is at least 20 in MOF, if Zun's disclaimer in the ending where she gets absolutely shitfaced is anything to go by. Sure, she's human now, but she is also a living goddess; and would not hesitate to remind anyone and everyone within earshot of this fact, and would probably object to me not listing her as a not-currently-human character for this reason.
And on the other end of the spectrum, the oldest characters besides Eirin are Tewi (THE White Hare of Inaba), Suwako (goddess of the Moriya Shrine for over a thousand years before being defeated by Kanako circa 500 BCE, and human shrine maiden of the same shrine over a thousand years before becoming its goddess) and Nue (THE Nue of legend). They generally aren't depicted as such in either body or behavior, in official works or in non-H fan works.
And in the middle of the spectrum is Miko, the only character in the series whose exact date of birth is known (7 Feb 574 CE -- her age as of this post is 1442 years and 166 days)
And finally, not on the spectrum at all, is the character known as Junko, who has purified herself of her true name and all other identifying information except for her eternal grudge against Chang'E (a grudge which makes the entire history of human warfare look like a somewhat heated game of checkers). As such, she is neither older than, nor younger than, nor exactly the same age as Miko.
Isn't Sanae a high-schooler? I know Marisa and Reimu are under-age and get drunk all the time and IIRC one of the books mention that its become a problem among the youth of Gensokyo to emulate Reimu/Marisa and drink sake

I thought Sanae was less than 20 considering, IIRC, Kanako sort of telling Sanae she doesn't really need to worry about Japan's alcohol laws in Gensokyo?
Isn't that too many candles?Happy Birthday! Master! There's still another 100 sets.
