Both lamia look like they're having fun. The red one is carrying around a basket of fruit, so they aren't dedicated carnivores. The yellow one is trying not to laugh.
So why is he so guarded and as though he's preparing to strike?

Probably because he sees the dummy maiden, but has not yet seen either lamia.

Maybe he just doesn't know that they don't eat humans and prefer other stuff. He probably heard stories about the lamias eating humans from others or he belives them to be mere beasts because they have snake tails and that's why he thinks that they are evil.
Have you tried lamb or sheep in general? I can't imagine that humans taste better than sheep.
Also even some carnivores like fruit.
And I can't really see lamias as complete carnivores like snakes I always thought of them as omnivores with a preference for meat. Much like a lot of humans.
