It is canon, just not quite done by original artist/staff. And even if you had color on character already, you still have to do their color again if you want to show them on Anime as it's completely different showing a character moving on screen. By that, I mean, harder. So, it's like you have to do everthing from the beginning, just not character concept and rough concept sketch. Hell, just watch Shirobako for more side line details.
