It's a made up name. We follow the official spelling in those cases. Also, the raw Japanese prononuciation is "Ederurizzo" エデルリッゾ, so "Edelritter" is obviously not what they were going for in any case.

They were trying to pull something German-sounding out of their derriere and "Edelritter" would be the correct form, if such a name would exist.
