Honestly I'm gonna choose to believe she's just a slob and not in a bad mental state or anything like that.

I get that feeling too but of course anybody out there could be suffering from depression. Even the cheeriest vtubers could also be going through some stuff. And of course, a really popular or even professional vtuber is probably gonna do their best to keep their happy attitude while on stream. All you can do as a fan and as basically a stranger is give them love and hope for the best when they're going through a tough time.

Vtubers do get A LOT of grief and haters in their job. The more popular/higher subbers they get, the bigger target they have on them. Even more so when they are big and highly controversial or have significant others in their lives. Just look at what happened to akai haato and kiryu coco after the China and Taiwan blow up. I still think Coco left partly from the burn out of that stress.
Also for indy vtubers often STRUGGLE to get and keep subscribers base and superchat donations. This picture is quite possibly the reality of a lot of vtubers. They don't make a lot of money and most of them drop out from going broke doing that job.

In fact, sometimes depressed people are the ones who try their hardest to present themselves as happy, or lean really hard into comedy to compensate. Robin Williams comes to mind.
