As someone who's only picking up Fate again now after only reading Stay Night, I can confirm. I mean, would you look at all that shit...
It's got visual novels, waifu baiters, Fate/Extra, Fate/Extella, Weeby garbage, free to play games, Gacha games, Apocryphes, autist friendly, cards based roll games, beat 'em up, Aging source mods, Dynasty Warriors ripoffs, mods for Civilizations, Games they made in 1990, games with devs who say they'll fight me, Devs defence from biodrones, even more Stay Night clones, Gimmick games with meme reviews, lots of cute girls to abuse, Waifus you can unlock, games that rip off Tsukihime, Graphics autists, framerate sperging, overheating, prices surging, Loot in boxes, point and press, Grand Order, Kaleid Illya, and all the porn, VN 2D, hack'n'slash 3D, bait nostalgia, quick and easy, Season events for rolling, cutscenes made with Flash, Easy puzzles, bad design, shitty graphics, waste of time, Small transactions, saint quartz, games that sell because of asses, Playerbase is underage, all your teammates whine and rage, VR games with no sales figures, jsdjfsdjjsdfj FUCK!
Yeah, I really like Touhou, but can't even start to pick up modern Fate or Idolmaster because I only have room for keeping up with one or two all-consuming franchises, and Touhou and KanColle already claimed those slots.
I somehow balance Azur Lane, Touhou and Fate. With Azur Lane getting a game and anime soon though, it's going to get bumpy. Granted I am more invested in Azur Lane than the rest. Fully keeping up with Fate is impossible, so I just stick to the games and animations.
There's so many related series works that I don't really understand.
I know it's part of the joke, but Touhou at least has the decency to keep it in one universe. Fate has like four or five series within their own universe.
Compared to Touhou to Fate....fate is a LOT harder....

Technically Touhou has 2 universes. The old era and the new one

I don't think it's the issue of "how much content" there is, but "how much content you need to be able to get a satisfiable experience out of it".
I can be a fan of Pokemon, Gundam and Yugioh simultaneously. Does that mean I have to consume every single works released under their names? No, I can just stick to a few, the most popular one and I could enjoy it nevertheless. It's the issue of how each installment can be enjoyed as a standalone piece.
You can arguably do the same with Idolm@ster and Touhou, you can pick up a single game and presumably enjoy it as a standalone game as much as a long time veteran would.
Fate isn't the same. A lot of the Fate experience is the throwbacks, self-references, clones and a lot of its convoluted rules that seems to change every other Thursday.
But since when people doesn't like it when I complain about Fate, I'll give another example : Kingdom Hearts. The major complaint people had about KH3 is that you will have absolutely no clue on its core plot unless you have also played its other 10 installments. And likewise you can't enjoy(or even understand) the Disney world stories unless you have already watched the film before.
This essentially means the game gatekeeps itself, that only the hardcore fans who had played all the previous installments AND watched all the Disney films can have the 100% KH3 experience. Worse is the previous games aren't even numbered correctly, which means even if you played KH1 and 2, you still would be completely lost on just what the hell is happening.
A lot of Fate is similar, you'd likely not give a shit about Rin in Extra, Rin in Priya, FGO Ishtar or even Misaya in Prototype if you hadn't already know about Rin from FSN before, and that's only one character in the sea of other FSN clones throughout all the universes.

Except fanworks are by their nature isolated. You don't need to read every fanwork in existence to understand Touhou, they're based solely upon the lore the game's characters are built on themselves (and you can read a wiki and not have to play all the games to do that, and only need to keep up with the characters in that manga at a time, so half the time, you only need to know EoSD and PCB characters.). You just can't keep up with Fate without having at least read a synopsis about all the characters and major games/animes/etc., and even some random (albiet official) comics become functionally canon by introducing their characters.
To run with Azure's point, the only thing that you need to learn in seventh generation in addition to what a first-generation player would need to learn are things from the main games, which are a couple types, a few extra rules like berries, and a few hundred pokemon themselves. That's a lot to learn, but it's not an overwhelming barrier to entry, and it's not like you need to learn it to really start.

i can still remember most of 2hou up to MOF (i think) and just dropped it after that but still not forgotten their faces/names, its simpler to remember things you like even if your not knees deep into the lore.
Despite not playing KC i like many of the characters (cept them potatoes, i can't tell them appart lol) because they got some lovable quirk.
