I would pick Yukari, followed by Eirin. Uhm, not sure if this is just my monitor or anything, but doesn't it look like Kanako's dress is the only pure white one?

It's not you, but Yukari's dress isn't pure white either.
I'd have to say it depends on which version of Yukari it is, and how much "Bored, Crazy, and Powerful" has infiltrated Yukari's mood. Could be a fun/interesting but very short life, depending.
Without knowing that, though, I could fairly easily go Kanako without ever looking back. Running a shrine and being some sort of step-father of Sanae might be a fun, if odd, life.
I never much liked Eirin, though. It's probably all the random torturing Reisen that is pretty much the only thing I see of her, plus the fact that she never really gets any cumuppance for her general snobbery.
Actually, I never really thought about Kanako all that much before, but considering as she essentially introduced Nuclear Fusion (and electricity) into Gensokyo for the purposes of allowing all sorts of modern tech toys like Hatate's cell phone to be useful, the more I think about what living with Kanako would be like, the more I think it would be a pretty spectacular deal.
The only bit of weirdness would be becoming the husband of Sanae's goddess and mother-figure... How do you walk in to someone's life and say, "Hey, I'm not that much older than you, but now I'm not just your functional step-dad, I'm also your deity's husband." Seems like it would be a little awkward...

Yukari is just too damn lazy and she likes Xanatos Gambits way too much. I'd never be certain if she actually loved me, was just being lazy and messing around for sport (since she'd easily outlive me anyway), or if she was just manipulating me for some scheme that's completely beyond my comprehension. Relationships require trust to work and no one in their right mind would trust canon Yukari.
Eirin is no good either. The same trust issues as with Yukari if not worse (she gave up a life of respect and prestige and betrayed and killed a bunch of her own people over a spoiled brat who wanted to be immortal despite already being eternally young), plus the irritation of having to put up with Tewi and always playing second fiddle to Kaguya's random whims. It doesn't help that it was "Inaba of the Earth, Inaba of the Moon" that introduced me to her character and she is a massively abusive b*tch towards poor Reisen there (talk about bad 1st impressions). I'd rather marry Reisen than any of the other Eientei cast; preferrably with the option of having her leave that place and move in with me.
Kanako is awesome by comparison. She's a little heavy-handed in trying to get her way and doesn't always think things through, but she genuinely wants to make Gensokyo more like the outside world in an effort to improve it, is more familiar with a culture similar to my own, and her supporting cast are the easiest to get along with. Sanae is kind of snobby, shallow, and thoughtless but she at least defers to Kanako and if Kanako says she approves of me there won't be any toruble. Pretty much the same for Suwako. A (relatively) quiet life in the Moriya Shrine would do me wonders and I can occasionally hang out with the tengu and kappa. If Kanako really trusts me I may be able to give her advice whenever she comes up with another scheme and head off another potential incident too.

It most certainly would be "until death". Eirin is long-lived but not immortal. She is thousands of years old; humans live at most about 100 years, give or take some. We would die long before she would, no contest.
Oddly, despite the fact I would have thought I'd pick Yukari, on actually thinking on it I'd probably choose Kanako. Goddess, seems the most modern and somehow she seems to wear the wedding dress best.
