Say, does the Thach Weave really translate well to naval warfare tactics? Seems a bit like knife-fighting with pikes to me.
No, it doesn't at all.
The Thach Weave is based upon the fact that air supremacy fighters are built to face in the direction they fire, making them vulnerable to attacks from the rear, especially since their huge momentum means they have a tremendous turning radius relative to their speed that makes it easy for a pursuer of similar or better performance to stay on the tail. The point of the maneuver is to make sure that even if someone gets on your tail, your wingman can get behind them, as well.
Ships, however, can fire omnidirectionally, and bring the most firepower to bear in a broadside. Getting up behind a ship without it already turning to bring its full arsenal to bear is both difficult and generally pointless.
But then again, an Abyssal destroyer has guns in its mouth. So does a ship girl (human form) would naturally have her fire power directed to her front.
Normal naval battle, this Thach Weave wouldn't do well. But KCverse naval battle wise, I think it might do some good.

'Side, the girl are dressed as pilots too.
It still requires that combat be fought at ranges where a ship's turning radius is large enough in relation to the effective combat range that a ship can't simply turn to face its attacker, making 'getting the enemy off your tail' difficult. Even with the massive turning radii of real ships, real-life ships fought at ranges measured in kilometers or miles. In KC, shipgirls can turn around with no turning radius at all in a second. To be at the sort of range where something "getting on their tail" would matter, you would need to be at literal "climb on the shinkaiseikan's back and step on their tail" ranges, which would be something that would require different tactics than simple Thach Weave.
